T-shirt scarf

I saw this idea on pinterest. I got one of my favorite old shirts that was getting to ratty to wear to work but that I didn't want to get rid of. First, I cut off the top. Next, I started cutting little strips to meet at the middle of the shirt. Then you are done :) sooooo easy and it looks adorable!

Baked spaghetti

Baked Spaghetti
I was CRAVING some Italian food, and I thought about the baked spasagna at Cheddars and thought to myself, I can make that. Then I thought, not only can I make that, I can make it lower in fat as well! I really loved how this turned out. I used a lot of what I had, but if I were to make it again, I would use more organic products.

1 box of whole wheat spaghetti
1 pound (or so) of ground turkey
2 cans of diced tomatoes
1 onion
1 green bell pepper
4 garlic cloves
1 tbsp Italian seasoning
1 tbsp garlic salt
1/2 to 1 tsp black pepper
1 and 1/2 containers of low fat or fat free cottage cheese
1 package (2 c) of mozzarella cheese
1 package (1 cup or more) Parmesan cheese

Boil the spaghetti noodles as the package directs. (al dente)

Put a little evoo in the skillet and add the turkey meat. Cut the onion, garlic, and bell pepper and add to the skillet. After the meat cooks for a few minutes add the garlic salt, pepper, and Italian seasoning.

Put the two cans of diced tomatoes in a food processor and blend to a good consistency. I like mine more like sauce. Add the sauce to the skillet after the meat is cooked. I let it simmer for a few minutes to let the flavors marinate.  Ohmiword, that is some good stuff :)

Next, I started with a layer of the sauce on the bottom of the pan. Then I put the noodles, cottage cheese, and mozzarella. I repeated that two more times, and put the Parmesan on the top.

It looks like that :) Then I baked it at 350 for 30 - 45 minutes depending on your oven.

TaaDaaa :)

I should have let it sit for a while so it could mold together, but I was too hungry! It was SO good. I love making something that isn't from a recipe. These are the times, I am even more glad that I inherited my Italian cooking genes.

Grandma's chicken salad

Ok so this recipe isn't really my grandmas chicken salad but every time I think of chicken salad, I think of Joey from the show Friends :) if you don't know what I am talking about watch the episode " the one with the triplets " you won't be disappointed! It's hysterical! Anyway I make this crazy good chicken dip that all my friends steal for parties. I wanted a chicken salad similar to it. I figured it couldn't be bad to recreate the recipe on a lighter note. I am always trying to make recipes that I love lower calorie.

Here is the recipe :
2 cans of chicken
4-6 tablespoons of light mayo (depends on your particular liking)
Garlic salt to taste
Black pepper to taste

Drain the chicken, shred the chicken put in a bowl. Add the mayo and see how you like it. I made the first batch with 6 tablespoons but next time, I would probably use less. Then add the garlic salt and pepper to taste. It's so easy and really good! I made it into eight servings, 100 calories apiece. If you use less mayo it would be less calories. Here are a couple pictures! Enjoy :)

I hate plants...

I decided to cut the annoying plants on one side of my house. If you couldn't tell by the title...I hate plants! I do not have a green thumb, and only the plants I hate will grow. Here are some after pics of one side of the house. I have decided that the grass man will be finishing the other side of the house! A present to myself :)

Busy busy busy

I am so slacking on my blogging! My masters and yearbook at school has kept me so busy! Here are a few pictures of my babies :) hopefully I'll have something to update on soon!
