1 box of whole wheat rotini pasta
2 cans of petite diced tomatoes
2 Zucchini, but I might use 3 next time
2 cloves of garlic, minced
4 tsp of Extra virgin olive oil
salt and pepper
a little bit of water
First you boil the pasta.
While that is boiling, cut the zucchini.
While that is boiling, put 2 tsp of oil into a skillet with cut zucchini.
Add the minced garlic. Cook until it is the consistency you prefer. Add salt and pepper.
Put in the cans of diced tomatoes. Of course you can use fresh tomatoes, I just didn't have any.
Add 1/3 cup of the pasta water to the tomato mixture. Cook until you decide it is done :)
Drain the pasta. Toss the zucchini and Tomato mixture into the pasta, add parmesan cheese and serve!
